Vegan Restaurant

I am not going to continue to bore you with our healthy diet. We are going to continue eating very close to how we have been the last couple of weeks. I will however write about other good foods, answer common questions we get in the office, etc. So check in frequently. Today we had lunch in Tempe at a Vegan restaurant called Green Restaurant. We heard about it from one of our patients. Feel free to share your good tips with us! It was really good. We shared some chili fries, Thai peanut stir fry with tofu and brown rice, Buffalo chicken sandwich with Thai coleslaw. We did splurge and split one of their chocolate chip cookies. Everything was very tasty and all Vegan! NO animal products.

Follow up on our gallbladder flush. Sunday and Monday we completed our flush. We used Epson salt which in itself is not all that comfortable. Drinking the olive oil is tough. Olive oil as a beverage is just not good! It was tough to get down and we definitely needed the grape fruit juice chaser!! It did make me a touch nauseous and I have not wanted any peanut butter yet. Too soon for something so high fat! However our gallbladders our flushed and a little discomfort for a day or two is well worth it.

Days 13 & 14

 We do our gallbladder flush Sunday, so now we are keeping everything plant based.

Day 13 Breakfast Juice plus meal replacement made with apple juice, banana, spinach, frozen blue berries, flax meal, vanilla and cocoa.

Lunch A Bora Bora bar – would have preferred something with fewer sweaters, however it is a bar made with mostly nuts, seeds, dried fruit and they are organic. I was at a clinic with the horse and Nels was in a tournament, so our lunch choices at the events were hamburgers and hotdogs – this compared to that…Bora Bora bar was the best choice.

Dinner Salad with spinach, peppers, red onion, mushrooms, tomato, avocado, blanched asparagus with a little non-fat balsamic vinaigrette. I also roasted some yucon gold potatoes in the oven.

Snacks Apple juice, couple falafel balls, and fresh strawberries, blue berries and black berries with a little peanut butter and almond butter

Day 14

Work out – P90X Yoga

QUESTION – How many calories does an hour of yoga burn?  First person with the right answer gets a free adjustment!

Breakfast Juice plus meal replacement made with apple juice, banana, spinach, frozen blue berries, flax meal, vanilla and cocoa.

Snacks Apple juice, couple falafel balls, and fresh strawberries and blue berries with a little peanut butter and almond butter

Lunch Salad with spinach, peppers, red onion, mushrooms, tomato, avocado, blanched asparagus with a little non-fat balsamic vinaigrette.

Tonight we will do the flush so all we will have is olive oil and grape fruit juice!! Tomorrow we will continue on our really healthy diet. It is important after a cleanse or especially a fast to continue a healthy diet, and not overwhelm the system with foods that should only be eaten on occasion.

Day 12

Losing Weight

We finally got apple juice for our liver and gallbladder flush which we will do Sunday. We found an organic one at Costco last night. Now we will add in a couple glasses of apple juice a day.

Work out was the Insanity Pure Cardio DVD.


Steal cut oats with fresh strawberries, blue berries and blackberries, flax meal, a touch of vanilla, honey and agave nectar.


Apple juice with Standard Process complete meal replacement. Carrot juice, peanut butter and almond butter. Raw sugar snap peas and a couple falafel balls.


Salad with spinach, green and red bell pepper, red onion, avocado, tomato, black beans with some non fat balsamic vinaigrette and an artichoke.


Juice Plus chocolate meal replacement made with apple juice with banana, frozen blue berries, spinach, vanilla and cocoa powder.

During this process we have been working on losing a few pounds. I tend to fluctuate in a 3 pound range, so I’m working my way back down.  As a young girl I was overweight and was getting teased. Then in seventh grade I finally got tired of being teased and having to buy bigger pants all the time. This must have also been the time I started to notice boys. So, I started cutting back on what I ate and exercising. This is probably why perusing a degree in nutrition was so appealing!

Nels is also working on losing a few pounds.  He was almost getting discouraged that he was not seeing any loss. Then I remind him we had been cutting back and on our cleansing diet for “ONLY” about a week. At the end of the first week he lost one pound, which is exactly what you want. One to two pounds per week is ideal. If you lose any more you are going to start losing muscle. Even when you know better it is easy to get frustrated, that’s why it is important to have someone to keep you accountable and stay focused with the end in mind.

When someone pisses you off, send them Love!

Today was an example of someone seeming to be acting like a jerk.  Nels and I had a lesson with the horses today. We started at about 11:30am and finished up at about 1:30pm so it was nice and hot. The horses were sweaty as were we. We loaded them up in the trailer and headed home but had to stop to get gas. I pulled into Safeway to get gas because it is an easy in and out with the trailer. I planned on pulling all the way in with the trailer so it would be shaded for the horses.  I pull up behind a guy at the first pump who just finished pumping his gas and was getting back in his truck…thinking he would start up and take off and I could pull through.  However, he sat there dickering around a bit, then finally started his truck and just sat there. I waved my hand out the window with a jester like are you going to take off?  Then he turned off his truck and continued to just sit there. I was a bit peeved. I don’t think he could have missed the large truck and horse trailer behind him, but maybe he did. I just backed up and pulled into another spot still a bit peeved. I had to remind myself that I do not know his situation and had to send him thoughts of Love. From my perspective it looked like he was just being a creep.  However he may have been having a terrible day and didn’t notice us, or for some reason even if he did see us he just could not pull out of there for a few more minutes.  Whatever the reason, I reminded myself to send him love and best wishes and move on, and not let it ruin my day! 

Days 10 and 11

Day 10

 Work out was an insanity recovery.  It was a slower work out focused more on strength, core and stretching.


Shake made with Standard Process complete, fresh pineapple and apples, spinach, frozen blue berries, flax meal, cocoa powder and touch of vanilla. Also had half a glass of carrot juice.

 Mid morning snack:

Whole wheat toast with avocado


We went to lunch with a friend today at Pan Asian.  It was a little off our clean diet but much better than some other choices we could have had. Sometimes you have to say this compared to that.  Nels and I shared some sushi and Kung Pow Chicken.  We did have a couple bites of fried calamari. It was a better choice than say a burger and fries.  I did eat more calories than I needed. So tomorrow I will cut back just a little to even things out!


Blanched broccoli and asparagus. Also a Juice Plus complete chocolate shake with apple, banana, flax meal, and frozen blue berries. 

Day 11


Steal cut oats with fresh strawberries, flax meal, a touch of vanilla, honey and agave nectar.

Snack after an Insanity power cardio work out

Standard Process meal replacement shake blended with fresh apples (we still haven’t bought apple juice!), spinach and cocoa powder. (If you haven’t figured it out I am a huge chocolate fan)

Snack before late lunch

Toast with avocado and tomato, glass of carrot juice and a few raw walnuts and peanut butter

Linner as Nels and I call it (late lunch and we are not eating dinner)

Our brussel sprout dish which is sautéed onions, peppers, mushrooms, celery, brussel sprouts, garlic and scrambled egg, seasoned with Bragg’s amino acids and ginger.  (Like fried rice, but with brussel sprouts instead of rice)

Tonight we go to a networking event so we wanted to be full to avoid the temptation of snacks we do not need. When we get home we’ll have a small Juice plus meal replacement shake with apple, spinach and frozen blue berries.

Day 9

 Breakfast Steal cut oats with fresh strawberries, flax meal, a touch of vanilla, honey and agave nectar. Snacks Few raw almonds, little peanut butter and half glass of carrot juice. For apple juice, we did not get any juice yet so started with fresh apples blended with a Standard Process complete shake. Lunch Salad with greens, black beans, wild rice (cooked in the am and chilled for the salad), bell peppers, onion, sugar snap peas, cauliflower, tomato, avocado and a little non fat balsamic vinaigrette. Also had 2 falafel balls. Dinner Shake of fresh fruit including pineapple, apple, banana and frozen blue berries with a touch of vanilla and unsweetened cocoa powder. One hour DVD of P90X for biceps and back. We still have a hard time keeping up with the amount of pull ups in the routines. They do several sets of 15-20 pull ups…we do maybe 3 to 5.

Day 8 of clean diet


Scrambled eggs with mushrooms, bell pepper, onion, spinach and soyrizo. Topped off with sliced tomato and avocado. A slice of whole wheat toast with a little buttery spread.


Edamame and a salad with mixed greens, onion, peppers, mushrooms, tomato, avocado, blanched asparagus and broccoli with a little non fat balsamic vinaigrette.


Fresh strawberries and black berries and some raw almonds and walnuts


A fruit shake with pineapple, banana, apple, kiwi, frozen blue berries with a touch of vanilla, flax meal and cocoa power. All blended together in our Vita Mix.

 Tomorrow we will start drinking the apple juice in preparation of the liver and gallbladder flush for Sunday.

Days 6 and 7

Day 6


Shake that was a combo of Juice Plus complete and Standard Process Purification shake with banana, kiwi, frozen blueberries and black berries, flax meal, vanilla and cocoa powder.

No time for lunch today, so a half slice of bread with peanut butter


Fresh caught salmon grilled with some smoky sea salt, and a salad with arugula, mixed greens, red and green bell peppers, green onions, mushrooms and cauliflower with nonfat balsamic vinaigrette.

Evening snack I blended some unsweetened almond breeze, vanilla, cocoa powder and kiwi, with a touch of agave nectar.

No work out today. I had a Mounted shooting clinic for most of the day. That in itself is a work out. Riding a shooting is an athletic event!

Day 7


Steel cut outs with flax meal, frozen blackberries, vanilla and a touch of honey and agave nectar.


Slice of whole wheat/omega 3 toast with avocado, raw cauliflower with some spicy humus and a few falafel balls (we get the falafel balls from Costco).

Snacked on a few raw almonds, walnuts and fresh strawberries.  Also a sample of yogurt with flax meal at Costco! Nels sampled a couple more items! 

Costco can be a challenging place to get through calorie wise when they have a lot of samples. A few bites of high calorie items add up quickly.  If you are watching your intake, it is not a good idea to go hungry. Make sure to have a snack at least before you go and limit yourself on the samples.  Make sure to cut back on the rest of your intake for the day if you sample!


Maui Maui grilled with grilled vegetables (asparagus, green onion, red and green bell pepper, and mushrooms seasoned with pepper, sea salt and a touch of olive oil.

Evening snack will be fresh fruit blended up in the Vita Mix – pineapple, banana, frozen berries, apple and a scoop of cocoa powder.

Work out was an insanity work out – polymeric cardio circuit.

Next week will be much of the same. We will cut back a touch on portions and start drinking apple juice. We still need to find a good source. This will start the preparation for the liver and gallbladder flush.
